Ingredients

  • 12 slices deli turkey
  • 6 large eggs
  • ¼ cup milk
  • 1 cup chopped spinach
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt & pepper to taste

Equipment

  • Muffin tin
  • Mixing bowl

Instructions

  1. Preheat oven to 350°F.
  2. Line each muffin cup with a slice of turkey.
  3. Whisk eggs, milk, seasonings, spinach and cheese.
  4. Pour into each turkey cup.
  5. Bake 18–20 minutes until puffed and set.

Tips & Swaps

  • Use ham instead of turkey.
  • Add diced peppers or mushrooms.

Optional Touch

Finish with a drizzle of jerk aioli — wicked protein-packed breakfast bite.
