Ingredients
- 1 cup mashed sweet potato
- 1 cup flour
- 1 egg
- 1 cup milk
- 2 tbsp melted butter
- 2 tbsp brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp baking powder
- Pinch of salt
Cinnamon Butter:
- 4 tbsp softened butter
- 1 tbsp honey
- ½ tsp cinnamon
Equipment
- Griddle or skillet
- Mixing bowls
Instructions
- Mix flour, baking powder, cinnamon, nutmeg and salt.
- Mix sweet potato, milk, butter, sugar and egg.
- Combine both mixtures until smooth.
- Cook on a greased skillet over medium heat until bubbles form; flip.
- Mix cinnamon butter and spread on warm pancakes.
Tips & Swaps
- Add crushed pecans for crunch.
- Replace milk with almond milk for dairy-free.
Optional Touch
Top with maple syrup AND whipped cream. Combo buss head.
