Ingredients
- 1 loaf French bread, cubed (day-old works best)
- 1 lb breakfast sausage, cooked & crumbled
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cups shredded cheddar
- 8 large eggs
- 2 cups whole milk or half-and-half
- 1 tsp garlic powder
- 1 tsp dried parsley
- ½ tsp black pepper
- ½ tsp salt

Instructions
- Grease the casserole dish; scatter bread cubes evenly.
- Cook sausage, onions and peppers until browned. Spread over bread.
- Sprinkle cheese over sausage mixture.
- In a bowl, whisk eggs, milk and seasonings.
- Pour over the casserole; press bread gently to absorb liquid.
- Cover and chill 1 hour (or overnight for deeper flavor).
- Bake at 350°F for 45–50 minutes until golden and set.
