Ingredients
Muffins:
- 1 ¾ cups flour
- 1 cup sugar
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tbsp pumpkin pie spice
- ½ tsp salt
- 1 cup pumpkin puree
- 2 eggs
- ½ cup vegetable oil
- 1 tsp vanilla
Cream Cheese Filling:
- 6 oz cream cheese, softened
- ¼ cup sugar
- ½ tsp vanilla
Equipment
- Muffin tin
- Mixing bowls
- Electric mixer
Instructions
- Preheat oven to 375°F and line muffin tin.
- Mix dry muffin ingredients.
- In another bowl, mix pumpkin, eggs, oil and vanilla. Combine both.
- Whip cream cheese, sugar and vanilla until smooth.
- Fill muffin cups halfway, add a spoon of cream cheese, top with more batter.
- Bake 20–22 minutes until tops crack slightly.
Tips & Swaps
- Add a sprinkle of cinnamon sugar on top before baking.
- Replace cream cheese with Nutella for a fun twist.
