Ingredients

Muffins:

  • 1 ¾ cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tbsp pumpkin pie spice
  • ½ tsp salt
  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla

Cream Cheese Filling:

  • 6 oz cream cheese, softened
  • ¼ cup sugar
  • ½ tsp vanilla

Equipment

  • Muffin tin
  • Mixing bowls
  • Electric mixer

Instructions

  1. Preheat oven to 375°F and line muffin tin.
  2. Mix dry muffin ingredients.
  3. In another bowl, mix pumpkin, eggs, oil and vanilla. Combine both.
  4. Whip cream cheese, sugar and vanilla until smooth.
  5. Fill muffin cups halfway, add a spoon of cream cheese, top with more batter.
  6. Bake 20–22 minutes until tops crack slightly.

Tips & Swaps

  • Add a sprinkle of cinnamon sugar on top before baking.
  • Replace cream cheese with Nutella for a fun twist.
