Ingredients
- 3 lb beef roast (top round or chuck)
- 1 Tbsp browning sauce
- 4 cloves garlic (minced)
- 2 Tbsp soy sauce
- 2 Tbsp olive or coconut oil
- 1 Tbsp brown sugar
- 1 tsp salt, 1 tsp black pepper
- 1 Tbsp pimento (allspice)
- 2 sprigs thyme + 3 stalks scallion, chopped
- 1 medium onion, sliced
- 1 Scotch bonnet pepper (optional heat)
Step-by-Step
1️⃣ Season Beef: Rub with all ingredients; refrigerate overnight.
2️⃣ Sear: Brown each side 4 min in a hot pan with oil.
3️⃣ Roast: Transfer to oven (350 °F / 177 °C) for ~1 hr 45 min until internal temp 135 °F for medium.
4️⃣ Make Gravy: Deglaze pan with ½ cup water + 1 tsp browning; simmer 5 min.
5️⃣ Rest & Slice: Let stand 10 min before slicing thin.
Tips & Swaps: Add 1 Tbsp ginger beer in gravy for zing.
Serve With: Rice & peas, mac & cheese, or roast potatoes.
