Herb & Jerk Stuffing 

Savory, Fluffy, and Holiday-Perfect

Ingredients 

  • 8 cups day-old bread cubes 
  • 1 medium onion, 1 cup celery (chopped) 
  • 3 cloves garlic minced 
  • 1 Tbsp butter + 1 Tbsp oil 
  • 1 Tbsp jerk seasoning 
  • 1 tsp thyme + ½ tsp sage 
  • 1 cup chicken broth 
  • 1 egg (beaten) 
  • Salt & pepper to taste 

Step-by-Step 

1️⃣ Sauté onion, celery, garlic in butter + oil. 
2️⃣ Add jerk seasoning + herbs; toss with bread. 
3️⃣ Moisten with broth, mix in egg. 
4️⃣ Bake 375 °F for 30–35 min till top crispy and inside moist. 

Optional: Add cranberries or diced apple for sweet touch. 

Fried Red Snapper (Escovitch Style) 

Crispy Skin, Tangy Sauce, and True Island Charm 

Servings: 4 Prep: 15 min Cook: 15 min 

Ingredients 

  • 4 whole red snapper (cleaned) 
  • 1 tsp salt, ½ tsp pepper, ½ tsp allspice 
  • ½ cup flour (for dusting) 
  • Oil for frying 
  • Escovitch Sauce: ½ cup vinegar, ½ onion, ½ carrot julienned, ½ Scotch bonnet, ½ tsp sugar 

Step-by-Step 

1️⃣ Season fish, dust with flour. 
2️⃣ Fry each side 5–6 min till golden. 
3️⃣ Boil sauce ingredients 2 min; pour over fish. 

Serve With: Bammy or festival.
