Blueberry Cream Cheese French Toast Bake

Ingredients

  • 1 loaf brioche or challah, cubed
  • 8 oz cream cheese, cubed
  • 1 cup fresh blueberries
  • 8 large eggs
  • 2 cups milk
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon

Equipment

  • 9×13 casserole dish
  • Mixing bowl

Instructions

  1. Grease dish. Add bread cubes, scattered cream cheese, and blueberries.
  2. Whisk eggs, milk, syrup, vanilla and cinnamon.
  3. Pour over bread mixture.
  4. Chill 1 hour or overnight.
  5. Bake at 350°F for 45 minutes.

Tips & Swaps

  • Add lemon zest for brightness.
  • Swap blueberries for mixed berries.

Optional Touch

Top with warm blueberry compote.
