Apple Cinnamon Oatmeal Bake

Ingredients

  • 3 cups rolled oats
  • 2 cups milk (or almond milk)
  • 2 eggs
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • 2 apples, diced
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ¼ cup melted butter
  • ⅓ cup chopped pecans (optional)

Equipment

  • 8×8 or 9×9 baking dish
  • Mixing bowl

Instructions

  1. Preheat oven to 350°F. Grease baking dish.
  2. Mix oats, baking powder, cinnamon, nutmeg, salt and apples.
  3. Whisk milk, eggs, maple syrup and melted butter.
  4. Combine wet and dry ingredients.
  5. Pour into dish and bake 35–40 minutes.

Tips & Swaps

  • Use pears instead of apples.
  • Add raisins or cranberries for more texture.

Optional Touch

Serve warm with a scoop of vanilla yogurt or whipped cream.
