- 4 whole red snapper (cleaned)
- 1 tsp salt, ½ tsp pepper, ½ tsp allspice

- Escovitch Sauce: ½ cup vinegar, ½ onion, ½ carrot julienned, ½ Scotch bonnet, ½ tsp sugar
Step-by-Step
