Ingredients
- 3 lb bone-in chicken pieces
- 3 Tbsp Jamaican curry powder
- 2 sprigs thyme
- 1 medium onion + 3 stalks scallion (chopped)
- 3 cloves garlic, 1 tsp ginger grated
- 1 Scotch bonnet pepper, chopped
- 2 potatoes, diced
- 2 Tbsp oil
- 1 tsp salt + ½ tsp black pepper
- 2 cups water or chicken broth
Step-by-Step
1️⃣ Season chicken with curry, salt, pepper, thyme, and aromatics. Marinate 30 min.
2️⃣ Brown curry powder in hot oil 1 min, then add chicken and sear.
3️⃣ Add water/broth to cover meat, simmer 30 min.
4️⃣ Add potatoes, cook 15 min more till gravy thickens.
Tips: Whole pepper = flavor no heat. Use coconut milk for richer gravy.
Serve With: White rice or boiled dumplings.
