Ingredients 

  • 6 medium potatoes (boiled & cubed) 
  • ½ cup mayonnaise 
  • 2 Tbsp mustard 
  • ½ cup mixed vegetables (cooked) 
  • 2 hard-boiled eggs (chopped) 
  • ½ small onion (minced) 
  • ½ tsp salt + ¼ tsp black pepper 
  • Dash of pimento & paprika 

Step-by-Step 

1️⃣ Combine all ingredients in bowl; mix gently. 
2️⃣ Chill 1 hr for flavors to meld. 

Tips: Add a splash of pickle juice for zing. 
Serve With: Any meat dish or fried fish.
